I saw a version of this dish published everywhere Tiktok So I thought I would go to him. There are many variations in cowboy caviar and the one below is my personal grip! I did it for a large group and served it alongside burgers, hot dogs and corn in epis. Yum! I forgot to take a photo before devouring it, which is a credit to its flavor.
Although there are a lot of ingredients (and a lot of cutting), I kept my variation as simple as possible. I opted for the canned corn instead of fresh, I added spices by spicy honey and crushed red pepper (rather than chopped jalapenos), and I went with a super easy vision of a “vinaigrette” which does not even require pre-quarry in a separate bowl.

Cowboy caviar
Ingredients
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 orange pepper, chopped
- ½ red onion, chopped
- 1 box of corn, drained and rinsed
- 1 box of Garbanzo beans, drained and rinsed
- 1 box of pinto beans, drained and rinsed
- 1 box of black beans, drained and rinsed
- 1 mango, chopped
- 1 lawyer, chopped
- Lots of feta cheese (quantity is a personal preference!)
- 3 limes juice
- Spicy honey
- Crushed red pepper, to taste

Instructions
Add the peppers, onion, corn and beans to a large bowl to mix and stir all together. Add the chopped mango and the chopped lawyer, then stir. (We ate this on the same day as I did, but if you store it in your refrigerator for several days, I suggest adding fresh avocado to each portion just before consuming it!) Add feta cheese and stir to incorporate.
Add the lime juice, a generous thread of spicy honey (I use the biological spicy honey sauce of Trader Joe's!), And crushed red pepper, to taste. Mix everything well, then taste and adjust if necessary, according to your personal preferences.
Enjoy with tortilla croustilles, use it in a salad or add it to tacos or envelopes. Essentially, eat it as you wish!
